Cheat's Mac 'n' Cheese

Hello there, and Happy New Year's Eve!
I hope you've all got fabulous plans to celebrate tonight. I'm looking forward to starting a fresh new year, and can't help but get excited as that means we'll be on the home stretch towards springtime!
Today I've got a very, very simple recipe for you, that I came up with whilst at University, as a substitute to making a proper white sauce (I didn't know how to make one at the time!) Macaroni Cheese has always been one of my favourite dishes, as long as it's homemade.



Despite now knowing how to make a proper white sauce, I still slip back to this recipe every now and then as it's a wonderful comfort, and oh so simple to make!


  Cheat's Mac 'n' Cheese  
Don't forget to refer to my Conversion Chart for your temperatures and weights.


Serves 1
Cook 10 -15 mins

What you will need:
4 oz penne pasta
2-3 oz frozen peas, depending on portion preference
2 tbsp cream cheese
handful grated mature cheddar
dash milk
2 tbsp water (optional)
knob of butter

salt & pepper, to taste
















What to do:

Bring a pan of water to the boil, with a dash of oil and a pinch of salt in. Add the pasta and the frozen peas together, and boil for approximately 10 mins, or until the peas go wrinkly and the penne is cooked to your taste.

Next, drain into a colander and transfer the pasta and peas back to the empty saucepan. 

Turn the hob down to a gentle heat, and add in the cream cheese, grated cheddar, dash of milk, knob of butter and seasoning, stirring regularly so it doesn't burn. Add in the 2 tbsp of water if you feel the sauce needs to be a bit runnier.

Once the grated cheddar has melted in, serve up into a pasta bowl and generously sprinkle with freshly ground black pepper.




And that's that... plain and simple... but oh so tasty!

This will be a fab way to use up some leftover Christmas cheese too, and is a super lazy meal in case you're nursing a sore head tomorrow!
